I've tried the iSight and two Bluetooth headsets with Skype on Mac OS X. Only now, after purchasing a USB headset have I been able to make a clean phone call to anyone on a conventional landline telephone via Skype. Apparently the fidelity of the other methods did not mesh with the encoder used to transmit landline calls. The GizmoProject VOIP experience was similarly improved.
I believe most USB audio headsets or microphones will work with Mac OS X, and you can find them at just about any consumer electronics chain.
The model pictured is a Logitech USB Stereo Headset 250. While still new, so far I am impressed by it's overall quality.
Remember that the quality of your online voice conversations will vary greatly with the quality of your microphone, so take the extra time to test your existing audio setup before expecting to make those first routine calls. I've been through a number of computer audio chat programs throughout the years and appropriate microphone setup is the one lesson that never changes.
